Easy Mutton Biryani Recipe Special for Eid al Adha

Mutton Biryani: 

Mutton biryani is a delicious and aromatic dish that originates from the Indian subcontinent. It consists of flavorful, spiced mutton (goat meat) cooked with fragrant basmati rice, herbs, and spices. The meat is typically marinated in yogurt and a blend of spices before being layered with partially cooked rice and then cooked together to perfection. The dish is known for its rich taste and the blend of spices like cardamom, cloves, cinnamon, and bay leaves that give it a unique and savory flavor. Mutton biryani is a popular choice for special occasions and gatherings due to its delightful taste and the effort put into preparing it.

Ingredients:


For Marinating the Mutton:

  • 1 kg mutton (bone-in pieces)
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  •  Salt to taste
  • Juice of 1 lemon

For Rice:

  • 3 cups Basmati rice
  • 6 cups water
  • 2-3 bay leaves
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 1 teaspoon caraway seeds (shahi jeera)
  • Salt to taste

For Biryani:

  • 4 large onions, thinly sliced
  • 4-5 green chilies, slit
  • 1 cup chopped tomatoes
  • 1/2 cup chopped fresh coriander leaves
  • 1/2 cup chopped fresh mint leaves
  • 1/2 cup ghee or oil
  • A few strands of saffron soaked in 1/4 cup warm milk
  • 2 teaspoons biryani masala powder
  • 1 teaspoon cumin seeds
  • 2-3 bay leaves
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 4-5 green cardamom pods
  • 2 black cardamom pods
  • 1 teaspoon black peppercorns

Instructions:

 Step 1: Marinate the Mutton

  1. In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, salt, and lemon juice.
  2. Add the mutton pieces and mix well to coat evenly. Cover and marinate for at least 2 hours, preferably overnight in the refrigerator.

Step 2: Prepare the Rice

  1. Rinse the Basmati rice under cold water until the water runs clear.After soaking in water for half an hour, strain the rice.
  2. In a large pot, bring 6 cups of water to a boil. Add bay leaves, green cardamom pods, cloves, cinnamon stick, caraway seeds, and salt.
  3. Add the soaked and drained rice. Cook until the rice is 70-80% done (the grains should still be firm when bitten). Drain the rice and set aside.

 Step 3: Cook the Mutton

  1. Heat ghee or oil in a large heavy-bottomed pot. Add cumin seeds, bay leaves, cloves, cinnamon stick, green cardamom pods, black cardamom pods, and black peppercorns. Sauté until fragrant.
  2. When the onions are golden brown, add the slices. Reserve a small portion of the fried onions for garnishing.
  3. Add slit green chilies and chopped tomatoes. Cook until they oil separates & the tomatoes are tender.
  4. Add the marinated mutton and cook on medium-high heat until the meat is browned and the marinade has thickened.
  5. Add chopped coriander and mint leaves. Mix well.
  6. Add biryani masala powder and salt to taste. Mix and cook for another 5-10 minutes until the mutton is fully cooked and tender.

 Step 4: Layering the Biryani

  1. Preheat your oven to 180°C (350°F).
  2. In the pot with the cooked mutton, spread half of the partially cooked rice evenly over the mutton.
  3. Drizzle half of the saffron milk over the rice. Sprinkle some of the reserved fried onions.
  4. Repeat with the remaining rice, saffron milk, and fried onions.
  5. Cover the pot with a tight-fitting lid or aluminum foil to seal in the steam.

Step 5: Dum Cooking (Slow Steaming)

  1. Place the pot in the preheated oven and bake for 30-40 minutes. Alternatively, you can place the pot on a low flame and cook for the same duration.
  2. Allow the biryani to cool for a five to ten minutes after cooking and then cover.

 Step 6: Serving

  1. Gently fluff the biryani with a fork, being careful not to break the rice grains.
  2. Serve hot with raita, salad, and a lemon wedge on the side.
